Ripe fruit meets Paso Robles nerve. Austin Hope Cabernet Sauvignon blends richness, polish, and a distinct mineral drive from Paso’s calcareous hills. The wine shows dark fruit depth, floral lift, and seamless texture shaped by careful élevage in French oak for balance and length. It drinks beautifully now and rewards short cellaring.

Nose — Black currant and ripe blackberry with violets, mocha, and dried spice; the aromas feel vivid and precise.

Palate — Full-bodied and plush; olallieberry and cherry glide with cedar, clove, nutmeg, and vanilla over fresh acidity and fine tannins.

Finish — Long and velvety, echoing dark fruit, cocoa, and a subtle crushed-stone snap that keeps the profile focused.

Ribeye with herb butter shines. Braised short ribs, rosemary lamb, and porcini risotto complement the wine’s depth and silky tannins. Aged cheddar or Gouda also fit beautifully.
