ABOUT
ABOUT
Decades of quiet evaporation in partial-fill Limousin oak casks strictly shape this spirit. The Camut family harvests traditional hautes-tiges apples across Pays d'Auge, fermenting the cider slowly before a rigorous double distillation in wood-fired copper pots. They blend brandies ranging from 50 to nearly 100 years old to assemble Rareté. It's essentially a living archive. No new wood obscures the orchard fruit here.
- Fermented slowly for 10 to 11 months in wooden vessels
- Double distilled in wood-fired copper pot stills
- Reduced gradually with collected rainwater
It doesn't rely on contemporary shortcuts. Bottled at 80 proof, the profile shows profound depth achieved when rustic cider interacts patiently with ambient air for half a century. Proper oxidation concentrates the flavor remarkably. You'll need a tulip glass and plenty of time to breathe before the heavy rancio notes fully resolve.
