ABOUT

Decades of quiet evaporation in partial-fill Limousin oak casks strictly shape this spirit. The Camut family harvests traditional hautes-tiges apples across Pays d'Auge, fermenting the cider slowly before a rigorous double distillation in wood-fired copper pots. They blend brandies ranging from 50 to nearly 100 years old to assemble Rareté. It's essentially a living archive. No new wood obscures the orchard fruit here.

  • Fermented slowly for 10 to 11 months in wooden vessels
  • Double distilled in wood-fired copper pot stills
  • Reduced gradually with collected rainwater

It doesn't rely on contemporary shortcuts. Bottled at 80 proof, the profile shows profound depth achieved when rustic cider interacts patiently with ambient air for half a century. Proper oxidation concentrates the flavor remarkably. You'll need a tulip glass and plenty of time to breathe before the heavy rancio notes fully resolve.

TASTING NOTES

Nose: Dense aromas of preserved apples immediately command the room. A distinct damp cellar funk wrestles with roasted walnuts and oxidized honey notes to create an incredibly layered, deeply earthy aromatic bouquet. The aroma feels undeniably historic. Sharp leather demands your attention.

Palate: The dense, oily texture coats your entire mouth almost instantly. Baked apples and dried gentian root wrestle with exotic vanilla beans, while a meticulous rancio element strongly anchors the complex flavor profile. Savory notes quickly pull your focus. Oak tannins aren't overly aggressive.

Finish: Wood spice lingers quietly on the tongue. The fading heat gently transforms into a warm, contemplative echo of morning dew evaporating over distant Normandy orchards just after dawn. It refuses to leave entirely. You won't quickly forget it.

FOOD PAIRING

This aged spirit demands extremely rich, savory companions. Rather than reaching for sweet desserts, pour this remarkably mature brandy alongside an earthy Pont-l'Évêque cheese to quickly draw out those deep rancio notes. A robust duck confit tames the subtle tannins brilliantly. Heavy fats won't overpower it.
