Thierry Veron began managing his family's estate upon his father's retirement in 2006. The Caves de la Bouquette, as his cellar is known, is located in the hamlet of Chavignol and sources estate-grown grapes from 5.5 hectares of vines planted in the surrounding hills. The harvest and winemaking are done by hand as has been the tradition for generations.
Made from Sauvignon Blanc, the only grape used for all the whites of Sancerre. This is a dry, fruity wine, full of freshness and vivacity. It is best drunk young.
It is perfect with oysters, shellfish and fish in sauce. It will also go particularly well with foie gras, which is quite original. Amateurs will delight in pairing it with a grilled andouillette.
