Tenranzan "Emperor's Mountain" Junmai Ginjo Sake

A true example of a ‘mountain style’ sake from one of the few prefectures of Japan that doesn’t border the ocean. Miyama Nishiki rice milled to 55% remaining.

Nearly clear with very subtle golden hue. The nose shows aromas of tart cherry and baking chocolate. Sweet cotton candy or bubble gum. Soft texture on the palate with bright notes of cherry and soft sugar / cotton candy. Though the notes are bright the palate leans towards being dry with just a touch of sweetness. The finish is creamy and nutty in the vein of almonds.

Savory and earthy to complement the hearty local cuisine famous for wild game like boar and venison.
