The family leverages the grape’s inherent copper-colored skins to forge something profound. They macerate the juice for thirty hours before allowing indigenous yeasts to take control. This radical ramato method reclaims the varietal's historical power. The process requires deliberate patience. Aging involves a precise split between stainless steel tanks and massive Slavonian oak botti for eight meticulous months before bottling without filtration. The resulting liquid captures the dolomitic limestone terroir perfectly. It hums with raw energy.
