He farms his tiny Jacquère parcels by hand, dodging the formidable inclines that render mechanized agriculture completely impossible. This painstaking labor yields grapes of staggering purity.

Residual sugar provides crucial flesh. All fermentation and aging occur within enamel and stainless steel tanks to preserve the crystalline acidity that the region is historically celebrated for. The dry, mountainous climate naturally stifles mildew, permitting exceptionally low sulfur doses throughout the entire vinification process. This minimalist approach exposes the unadorned, electric core of the fruit.
