The foundation relies on crisp white wine from the Luberon, providing a structural backbone that prevents cloying sweetness. Three varieties of peaches are macerated alongside autumn-harvested peach leaves, introducing a crucial tannic edge. This deliberate addition of leaves offsets the ripe fruit, creating an unexpected botanical depth. Six months to a year of resting allows the disparate elements to integrate fully into a cohesive, golden liquid.
