Pascal lives a biodynamic lifestyle, from tending his vines to making his wines to preparing his meals. Always curious, he loves to explore the possibilities of what off-beat varieties like old-vine Gamay, Grolleau and Cot can do in his hilly appelation, Azay-le-Rideau. He is making gorgeously pure red, white and bubbly wines from vines planted when his great-grandfather returned home after the war. Certified Biodynamic.
Beautiful sparkling rosé from the Loire Valley made from 100% Grolleau Noir. The Perlette is very aromatic, with notes of raspberry, cassis, white flowers, and seashells. There's good acidity on the palate, which makes this an excellent food pairing wine...but it's tasty enough to drink on its own!
