2012 Onabay Vineyards Cabernet Franc 'Cot-Fermented'
All of the grapes were hand-harvested. After de-stemming, the whole berries soaked for 2 days at 58 degrees F to extract color prior to the beginning of fermentation. Following a longstanding old world tradition of fermenting different grape varieties together, Cabernet Franc (84%) and Cot (16%, aka Malbec) were co-fermented to achieve a more harmonious integration of the characteristics of each variety. The wine was aged for twelve months in seasoned French oak and bottled with minimal filtration.
The wine is medium bodied with fresh raspberry aromas and flavors with notes of savory herbs in the finish.
