ABOUT

This exquisite 1974 vintage release hails directly from the chalky, mineral-rich soils of the acclaimed Borderies cru in France. Michel Giboin originally distilled this exceptional batch over an exceedingly rare, direct-fired wood alembic still during a remarkably cold winter season. That rugged technique imparts serious depth. It rested peacefully in oak casks until 2005. After that, it's moved to glass demijohns for meticulous preservation. You're receiving a pure snapshot of history.

François Giboin currently stewards this historic family stock. He selectively releases just a tiny fraction of their aged inventory every single year to maintain uncompromising quality standards across the board. His immense patience clearly pays off. You'll taste the unique terroir instantly. The dark cellar mold works its slow magic. This particular offering stands apart as a genuine testament to old-world distillation methods.

  • Distilled from estate-grown Ugni Blanc grapes
  • Aged in oak before demijohn transfer
  • Crafted without added sugar or caramel

TASTING NOTES

Nose: White lilies and blond tobacco jump out. You'll catch heavy aromas of ripe plum intertwined with a damp under-wood earthiness that speaks to decades spent in a humid cellar. A sharp dash of white pepper pierces through that initial density.

Palate: It's remarkably full and downright syrupy. Intense waves of cooked fig, sticky dates, and dark treacle wash across your tongue before giving way to complex baking spices and cinnamon. Leather notes linger quietly behind.

Finish: It fades out incredibly slowly. You're left with a persistent warmth that carries delicate honeysuckle and violet floral notes long after the final sip leaves your glass. Dark oak tannin anchors the end.

FOOD PAIRING

A rich spirit demands equally robust flavors to shine. Pour a neat measure alongside a roasted duck breast served with an earthy wild mushroom reduction to brilliantly complement the savory rancio notes. It'll match dark chocolate perfectly.
