50% Pinot Noir and 50% Grolleau from organically farmed estate fruit. Sourced from several parcels from within the Touraine area with various soils found throughout, including clay mixed with flint and clay with a chalky subsoil. Always vinified sec in stainless steel using indigenous yeasts. Aged on its lees in stainless steel until bottling in March.
