Low Gap Whiskey is made by hand by Crispin Cain, who apprenticed with mad scientist/famous distiller Hubert Germain-Robin of Germain-Robin, a pioneering American micro-distiller who has been making great brandies since the 1980s.

Low Gap is made from malted Bavarian wheat, fermented slowly, distilled twice using rigorous and painstaking craft methods, and brought to bottling proof with unfiltered rainwater. The Germain-Robin small, 420 gallon cognac still comes from the old Surrenne distillery attached to the family chateau in Triac. It is an antique, operated entirely by hand. They brought it over for small lots of varietal apples, but they have also used it for grape spirits. They didn't realize how special it was until Crispin Cain began to distill whiskey on it: the still produces beautifully round, soft, elegant and complex distillates. The whiskey is aged in a combination of new American oak, 53 gallon, former Van Winkle bourbon barrels, and 350 liter used Limousin oak barrels formerly used for Germain-Robin brandy.

This whiskey is made in small quantities, and was named “Artisan Whiskey of the Year” in 2012 by the Whiskey Advocate. 

Fruity nose with pears and apples and a bit of wood with an oily hint. Medium bodied, smooth and round with vanilla sweetness and a touch of spice that include cinnamon and licorice and a big Cognac note. Plums, chocolate and raisins on the finish.
