Guillermo Sauza personally hand-selected highland agaves from the San Ignacio Cerro Gordo fields to craft this extremely rare Lote 31-S release. This is not standard still strength. The team diverted from their traditional Lowland sourcing to deliver a strikingly different terroir profile. They produced fewer than 700 bottles exclusively for the legendary San Diego agave bar. Clocking in at an undiluted 92 proof, the spirit masterfully preserves volatile aromatic compounds that standard proofing invariably destroys. The liquid commands attention instantly. The Los Abuelos distillery relies on masonry brick ovens and a two-ton volcanic tahona wheel to extract the incredibly rich agave nectar. Modern diffusers strip away character.
