This layered, complex double oak bourbon underwent a meticulous aging process, starting in a new Char 3 barrel before spending the final two years in a custom Medium Toast barrel with a level 1 char.  The second barrel was crucial in extracting deeper layers of flavor and achieving a velvety finish. The proof was gently lowered to 112.5 before entering the second cask for a “softer” secondary aging. This process yields a Double Oak bourbon with depth and structure, highlighting notes of toasted wood, caramelized sugars, and baking spices, while avoiding an overpowering tannic influence.
