Is it possible to taste the color white? Guillaume Gallois seems to think so, and with "Nos Terres Blanches" (Our White Lands), he might just prove it. This isn't the Champagne of big, billboard brands; it is a grower effort rooted deeply in the chalky soils of Vertus Premier Cru.[2] Guillaume, a protégé of the legendary Fabrice Gass from Bollinger, brings a technical precision to this cuvée that borders on obsession. He blends equal parts fresh harvest with a perpetual reserve started in 2015, creating a wine that feels suspended in time—caught between the nervous energy of youth and the wisdom of age.

The focus here is 100% Chardonnay, but don't expect a butter bomb. This is a study in tension. The vines struggle in pure limestone, forcing roots deep and resulting in a liquid that is electric, savory, and relentlessly mineral. It’s the kind of bottle you open when you want to wake up your palate, not lull it to sleep.

TASTING NOTES

Nose: The aroma is laser-focused and bright.[3] Immediate strikes of lemon zest and crisp Granny Smith apple cut through the air, followed closely by a distinct chalk dust note that speaks directly to the soil. As it opens, softer layers of almond skin, fresh brioche, and a fleeting whisper of white flowers emerge, complicating the picture.

Palate: On the tongue, it is linear and precise.[1] The mousse is fine, almost creamy, yet it carries a distinct saline edge that feels like sea spray.[5] Flavors of citrus pith and green pear dominate the attack, supported by a savory, yeasty depth derived from the reserve wines.
