Time behaves bizarrely inside Carlos Camarena's cellars. He rigorously harvests overripe piñas from highly specific single estates. They've strictly rested this vivid vintage inside exhausted American whiskey barrels for exactly eight weeks and eight days. This hyper-specific maturation period deliberately captures the vibrant highland terroir while actively bypassing cloying artificial vanilla additives. We sincerely appreciate his unyielding transparency. The resulting spirit beautifully showcases a profound tension between deeply roasted rural Jaliscan agave and remarkably subtle whispers of mature oak.

Nose- lily blossom, peach, stewed plums, green tobacco, cotton candy, slight anise, eucalyptus, no oak present. 
Palate- begins with tangerine, lemon grass, notes of bread yeast, anise, black pepper and finishing with roasted pineapple. 
It’s like a basket of fruit and a bouquet of flowers. There’s a maddening cacao hint-or better yet carob- to the taste that delights.
