ABOUT

Wild Common Añejo is a bold, small-batch tequila crafted at the revered Tequila Cascahuín distillery (NOM 1123) in El Arenal, Jalisco. Master Distiller Salvador “Chava” Rosales Trejo oversees its traditional production, which includes 72-hour roasting in brick ovens, extraction using both tahona and roller mill, natural fermentation with agave fibers, and double distillation in stainless and copper pot stills. Aged for 12 months in ex-bourbon barrels, this 94-proof expression showcases a luminous straw color with thick, viscous legs, promising an exceptional sipping experience.

TASTING NOTES

Nose: Delicate florals, raw honey, fresh tarragon, and subtle cinnamon.

Palate: Cooked agave, golden raisins, warm spices, candied ginger, and luscious dates.

Finish: A harmonious blend that evolves beautifully as the spirit opens in the glass.

FOOD PAIRING

Wild Common Añejo pairs beautifully with a variety of dishes. Its rich and complex flavor profile complements grilled meats, such as ribeye steak or smoked pork ribs. For a delightful contrast, try it with dark chocolate desserts or aged cheeses like gouda or manchego. The tequila's warm spices and sweet notes also enhance the flavors of dishes with mole sauce or caramelized onions.
