This wine is made from 100% Lacrima di Morro d’Alba. The grapes undergo carbonic maceration. The encuvage of the whole berry fruit takes place in special stainless steel tanks for 3 to 4 days. The wine is then racked and the berries are crushed. Both free run and pressed juice are then allowed to ferment at temperature-controlled levels. The wine is racked and placed in stainless steel holding tanks until bottled where it is aged for 3-4 months. Sustainable
