This wine is inspired by the Blanc de Blanc Champagnes of the Cote des Blancs region . By carefully selecting and hand harvesting chardonnay at their precocious vibrant stage of early ripeness, the grapes retain all of the nervous acidity and minerality made possible by the North Fork's cool maritime climate.
The wine is made by the traditional, old world method of inducing a secondary fermentation in the bottle. With over 30 months en tirage (resting on its lees), this sparkling treat exudes elegant balance.
TASTING NOTES
The 2012 Blanc de Blanc possesses bright aromas of green apples, lemon verbena, and ripe grapefruit. On the palate, these aromas are joined by refreshing flavors of Bosc pear and citrus, that lead to a crisp and clean finish.
