Founded in 1977 in Alba, Italy, proprietor and head distiller Paolo Marolo creates his eponymous grappas by following two simple rules: source superior, single varietal pomace and press it as soon as possible. Freshness is so essential to Paolo that he keeps his discontinuous “Bain Marie” copper stills running around the clock during the harvest season. The discontinuous distillation method is traditional to the area and one favored by small producers because it allows them to manually control the pace and evolution of the distillation. Over the years, Paolo has successfully developed key relationships with wineries throughout Italy to secure the finest pomace for Grappa Marolo. His attention to detail has become legendary and as such he is considered a Master Grappaioli. Marolo’s meticulously hand-crafted Grappa & Camomile is a liqueur obtained from the infusion of camomile blossoms in grappa made from fresh and carefully selected Piemontese Nebbiolo grapes. The camomile flowers are picked when fully mature, dried in the shade, left to steep for 11 months in the grappa which is then filtered. A time-honored product of the Langhe hills -- the land of Barolo and Barbaresco - is transported to a new realm of elegance.
We were soooooooooooooo skeptical when we were told to buy a bottle of this delicious grappa. "Camomile in my grappa? Come on!" we said. However, this stuff is exquisite. It's thick, coating, and heavenly with pure notes of fresh camomile gently blended into the more subtle grappa flavors. If you love grappa, you'll love this. If you hate grappa, you'll still love this.
