The vineyard is located between Carcassonne and Narbonne in the basin of the Minervois appellation. The soil is predominantly made of clay and limestone. Grapes are picked at their optimal ripeness, carefully sorted and destemmed. Temperatures are controlled during the alcoholic fermentation. The press is made through pneumatic press. The juice goes through malolactic fermentation, then racking, then blending of the wines. Every decision made during the vinification is made following daily tastings by the winemaker.
TASTING NOTES
Red ruby color with purple hue. Aromas of black fruit on the nose. On the palate, the wine is dry, creamy and velvety with hallmark aromas flavors or cassis and dark berries.

Enjoy on its own of pair it with grilled lamb or beef and all cheeses.
