ABOUT

Madeira casks give this Kavalan Distillery Reserve a different kind of glow, more sun-drenched orchard dessert than brooding sherry bomb. Drawn from a single ex-Madeira cask and bottled at undiluted cask strength, it shows precisely what Taiwanese heat can do to carefully chosen oak. No chill filtration, no coloring, just the distillery’s malt, wine-saturated wood, and subtropical climate working together in one focused expression.

The nose feels plush and bright at once. Ripe apricot, golden raisin, and honeyed malt rise first, followed by orange oil, toasted almond, and a ribbon of warm vanilla. With a bit of air, you start getting crème brûlée crust, dried mango, and a faint nuttiness that clearly nods toward Madeira’s fortified wine roots.

On the palate, the whisky arrives thick, almost syrupy, but still surprisingly nimble for full cask strength.
Raspberry coulis, stewed stone fruit, and caramel sauce coat the tongue before cinnamon, clove, and ginger spice start to glow at the edges. A thread of cocoa, light espresso, and orange marmalade brings welcome bitterness and brightness, stopping the sweetness from ever feeling sticky or heavy.

The finish hangs on with dried fig, raisin, and berry jam, slowly giving way to black tea tannin and seasoned oak. Heat feels steady and composed rather than sharp, letting you sit with the afterglow of fruit, chocolate, and gently drying spice. It’s one of those pours that happily replaces dessert and doesn’t mind taking the whole evening to do it.

TASTING NOTES

Nose: Aromas open with ripe apricot, peach, golden raisin, and honeyed malt over vanilla cream and toasted almond.
Hints of orange zest, crème brûlée, and light walnut skin add depth without making the nose feel heavy or over-oaked.

Palate: Full-bodied and mouth-coating, the palate shows raspberry coulis, stewed plum, and baked stone fruit over caramel sauce and milk chocolate. Cinnamon, clove, ginger, and a touch of pink peppercorn build slowly as cask strength heat gathers in the background. A flash of citrus oil and faint sea salt keep everything just sharp enough to stay lively.

Finish: Long and layered, the finish leans on dried fig, raisin, and berry jam over cocoa powder and espresso grounds.
Black-tea tannin, gentle oak, and lingering baking spice dry the edges while fruit and chocolate echoes linger.

FOOD PAIRING

This Madeira cask single malt pairs well with rich, slow-cooked dishes and desserts that lean into fruit and caramelized edges.

Try it with roast duck and cherry glaze, crispy pork belly, or braised short ribs finished with a splash of red wine reduction.

On the cheese board, reach for aged Gouda, mature Comté, or a firm blue where salt and funk can stand against all that fruit.

Desserts like flourless chocolate cake, fig tart, or salted caramel cheesecake pick up their berry, cocoa, and toffee notes beautifully.
