The brewery, Sakata Shuzo, is located in Sakata city, Yamagata prefecture, which has been historically known as one of the most prosperous ports in Japan. Sakata Shuzo was established in 1949, from a coalition of five breweries which have been around since the Edo period. Currently, the president, Shoichi Sato, takes the leading role as the Toji, or master brewer, conducting the brewing process with dedication and uncompromising ways.

TASTING NOTES

A masterpiece of the Yamagata style, nuances of wild black cherry colliding with savory and herbal notes. Aromatic and medium bodied, this sake shows off the incredible expressive quality of heirloom Omachi rice with its dark, rich and herbaceous character. It is polished to 50% to unlock delicate aromas and flavors then brewed in the labor intensive and time consuming kimoto method giving the sake body, creaminess and a gorgeous acidic finish. Serve slightly chilled and ideally pour into a nice large glass to bring out the aromatics.
