The Granite Rose is a drier cider with roughly 1% black currant juice added. It comes topped by a traditional Champagne cage, but the bubbles, the mousse here, is very delicate and soft – almost nonexistent, at least visually. You feel it a bit more on the palate as a textural presence. The truth is when I hear about fruit juices being added to cider I certainly have one eyebrow rise every-so-slightly in a stance of dubious questioning. However, in this case, well, damn: the rosé is delightful. Which is to say, it’s done with restraint. The black currant gives the cider a beautiful delicate rosy tinge, but also a really aromatic and mouth-watering perfume. Yet the cider, the apples, shine through, and that’s the magic. The overall impression here, as with the “Brutbrut,” is full and rounded, juicy. It begs you not just to drink it, but gulp it. The fun here is the balance, the play of sweet fruit and acidity and bitterness. Delicious. This cider is made from apples that have fallen and were allowed to further ripen in wooden crates. Cédric uses the old-school process of “keeving” to clean the musts (thus they are not filtered) and all fermentations are natural. The ciders are bottled with no sulfur.
