NV Le Pavillon de Saint-Jacques Lalande de Pomerol

80% of Merlot, 15% of Cabernet Sauvignon, 5% of Cabernet Franc. Gonzague Maurice, the owner-winemaker, bought an estate (Chateau de Grandchamp) in Montagne-Saint-Emilion in 2005 with vineyards in Saint-Emilion, Puisseguin-Saint-Emilion and Lalande de Pomerol.The estate is 32 acres large regrouping the 4 A.O.C. The fermentation at controlled temperature takes place in cement vats where the wine will mature for 18 months. No wood for this wine, leaving space for the fruit. After a light filtration, the wine is bottled.
