ABOUT

Grower Champagne demands unwavering attention. Especially when it emerges from the silex-laden soils of the Vallée du Petit Morin, a localized pocket southwest of the Côte des Blancs. Cyril and Clémence Jeaunaux-Robin steward a minuscule 5.7-hectare estate in Talus-Saint-Prix, operating essentially out of their backyard. These forty-year-old vines thrust deep into flint-rich earth, capturing a stark, undeniable minerality. The terroir naturally champions Pinot Meunier, utilizing the grape's innate resilience against the valley's notoriously brutal spring frosts.

It’s an uncompromising, terroir-driven bottling. Practicing meticulous biodynamic viticulture ensures the fruit arrives at the press with remarkable vibrancy, while the exceptionally low dosage strips away any superficial makeup. This wine demands serious contemplation. The deliberate integration of Pinot Meunier with supporting fractions of Pinot Noir and Chardonnay creates a compelling tension, balancing inherent richness with a tightly wound acidic core.

  • Farming Practices: Rigorous biodynamic viticulture prioritizing holistic soil health.
  • Terroir Profile: South-facing slopes dominated by distinctive silex outcroppings.
  • Cellar Approach: Minimal dosage preserves the wine's inherent precision.

TASTING NOTES

Nose: Bruised orchard fruit converges immediately with a sharp, struck-flint aroma. It reveals subtle layers of dried white flowers and fresh brioche, anchored firmly by a rather savory hint of crushed chamomile. It’s entirely focused on the soil.

Palate: The texture arrives with startling precision. A tightly wound core of crisp yellow apple and citrus zest unfurls gradually, supported throughout by a remarkably fine, pinpoint mousse. Structuring acidity provides a formidable spine.

Finish: Chalk and saline elements dictate the conclusion. It lingers with an austere, flinty resonance that completely ignores the initial fruit, compelling you to dissect the underlying mineral architecture. It’s bone-dry and ruthlessly precise.

FOOD PAIRING

This cuvée possesses the acidic structure to dismantle profound culinary richness. Pair it alongside a traditional blanquette de veau or meticulously prepared pork rillettes, where the wine’s tensile acidity easily slices through the dense, heavy fat. Don't shy away from aged alpine cheeses. The crystallized proteins within a sharply matured Beaufort clash brilliantly against the vibrant Meunier fruit and pronounced silex minerality, forging a deeply savory combination.
