ABOUT

Old-school Châteauneuf-du-Pape with real soul. Domaine Bois de Boursan crafts this Rhône classic from vines scattered across nearly thirty small parcels surrounding the village of Châteauneuf-du-Pape. The Versino family farms organically and works with all thirteen permitted grape varieties, letting Grenache lead while the rest quietly weave texture and nuance. Fermentation happens with whole clusters, followed by roughly eighteen months resting in large traditional foudres before bottling without filtration. The result feels honest and vibrant—dark fruit, savory herbs, and a rustic edge that keeps every sip lively and grounded.

TASTING NOTES

Nose: Wild herbs rise immediately. Crushed blackberries, ripe cherries, and plum swirl together with dried lavender, cracked pepper, and a whisper of leather drifting through the glass.

Palate: Dense fruit arrives first. Layers of black cherry, raspberry compote, and dark plum glide across the palate while notes of licorice, olive tapenade, and warm baking spice add intrigue.

Finish: Long, steady, memorable. Silky tannins linger with hints of peppercorn, garrigue herbs, and dark cocoa, leaving a savory echo that slowly fades.

FOOD PAIRING

This wine loves hearty dishes. Roasted lamb with rosemary feels like a natural companion, while grilled ribeye, duck confit, or slow-braised short ribs draw out the wine’s deep fruit and savory backbone. Aged cheeses—Comté, Gruyère, or firm sheep’s milk—bring out its earthy charm.
