he Hi Proseeco is made from the "glera" grape more commonly known as Prosecco and grown in the Triveneto hills. The vines are carefully managed and trained using both the double Guyot system and the Italian training system of "cordone speronato". After harvesting and gentle pressing the must is put into stainless steel tanks for the fermentation of the still wine. When ready the must is naturally decanted and then transferred into the pressure tanks for the sparkling fermentation. It stays in the tanks on the yeast for about one month before bottling until it is perfectly sparkling.
Pleasantly fresh and mineral. Notes of pear and golden apples. Very harmonious and satisfying on the palate with good length and persistence. Overall extremely easy to drink with a light fruity finish.
