Distilled at Chattanooga Whiskey Co.’s Riverfront Distillery in Chattanooga, Tennessee, this 91-proof (45.5% ABV) straight bourbon, known as “Barrel 91,” is the signature Tennessee High Malt recipe, selected by Head Distiller Grant McCracken from the first 100 barrels at their Experimental Distillery. Crafted with a four-grain mashbill (yellow corn, malted rye, caramel malted barley, honey malted barley, with at least 25% specialty malts), it undergoes a 7-day fermentation, distillation in a 30ft custom column still, and aging over 2 years in toasted and charred 53-gallon oak barrels. Finished in a 4,000-gallon charred oak solera barrel that never empties, it blends 8-12 barrels per batch for consistency and complexity. Non-chill filtered, it retains a rich, malty character. Sip it neat, on the rocks, or in an Old Fashioned for a malty twist.

Nose: Butterscotch pudding and dried apricot lead, with honeyed toast, brown sugar, and sweet bread. Malted grains and a hint of Bing cherry add depth. It’s a confection-rich tease.

Palate: Medium-bodied, with caramel, vanilla, and candied almonds. Notes of tiramisu, light oak, and pepper spice unfold, balancing sweet malt with subtle fruitiness.
