The pinnacle of Taiwan's subtropical heat works magic on this extraordinary single malt. The 2025 International Whisky Competition crowned this expression Whisky of the Year with a score of 97.04 points, marking the first time a non-Scottish distillery claimed the competition's highest honor. That's no small feat.

Since 2005, Kavalan has aged its spirits in intense humidity, purified by meltwaters from Snow Mountain in Yilan County. The distillery's Solist range represents its finest single-cask bottlings, each hand-selected and bottled at natural strength without chill filtration. This Fino expression stands apart from typical sherry-aged whiskies. The fino casks rest on the top floor of the warehouse where temperatures reach their most intense klwines, a room distillers call "the church" because miracles seem to happen inside those barrels.

Fino sherry brings something different to whisky maturation. It's the driest, palest sherry style—delicate and restrained compared to its richer cousins. Taiwan's tropical climate extracts more nutty, almond character from these casks than Scotland's colder conditions ever could. The result? A whisky that defies expectations. Rich and malty, turning toward salted caramel, toasted almond skins, toffee, and crème brûlée klwines—this represents a side of sherry-aged whisky rarely encountered. Each bottle varies slightly since every cask tells its own story.

The distillery completed construction in just nine months back in 2005. Their first spirit was distilled in March 2006. Speed defines everything here—not just building, but aging too. Four years in Yilan's heat equals a decade or more in Scotland. Jim Murray named this expression "new whisky of the year" in his 2012 Whisky Bible, and the accolades haven't stopped since. 

This is whisky for the adventurous. Bold, unapologetic, complex. Early production - a whisky matured in Fino sherry casks, rather than the usual darker sherry styles. Rich with more fresh fruit than you might expect from a sherried whisky.

 

TASTING NOTES

Nose: Mango, apricot, and grilled pineapple burst forward, layered with almonds, dried figs, and oak spice. There's creamy toffee here, rich fudge, and a whisper of chocolate. Overripe citrus mingles with green apple. The fruitiness unfolds in waves—each sniff reveals something new. Walnut shells crack open. Brown sugar reminds you of Black Forest cake. Leather and sultanas add warmth. Sandalwood drifts through.

Palate: Viscosity like thick syrup melts across your tongue. Natural sweetness arrives first, gentle fudge flavors following close behind. Rich plum, brandied cherries, dark chocolate, and the dry finesse of fino sherry create remarkable depth. Complex fruit layers interweave with dry-smoked wood. Peaches in syrup. Dried mango. Toffee and milk chocolate harmonize. A surprising note of blueberry jam brings freshness. The cask strength commands respect—add water if you like, but this whisky earned its proof.

Finish: Exceptionally long. Roasted flavors dominate initially, transitioning slowly into dessert wine sweetness. Coffee, sandalwood, and dried citrus linger. The sherry remains the undisputed star throughout. Black tea's tartness provides an elegant, dry conclusion. That pleasant mouth-drying sensation leaves you ready for another sip.

FOOD PAIRING

This cask strength powerhouse demands bold companions. Iberico ham, roasted duck with plum glaze, or grilled portobello mushrooms match its umami depth beautifully. The whisky's nutty character plays brilliantly with aged Manchego or creamy Stilton. Try it alongside seared salmon—whether teriyaki-glazed, tandoori-spiced, or smoked.

For sweet contrast, pair with salted dark chocolate or pecan pie. The chocolate echoes those crème brûlée notes while salt amplifies the whisky's complexity.
