Volans Single Barrel Ultra Premium Reposado Tequila

This single barrel comes from one of Felipe’s personal American oak barrels, a used Tennessee whiskey barrel with a char #3. It was rested for 3 months in his underground cellar. The conditions in the cellar, with high humidity and stable temperatures, allow the tequila to pick up complexity from the wood without losing its agave character. You get a beautiful balance: the influence of the barrel is there, but the tequila still shines. Bottled at 44% ABV, it’s just shy of cask strength and full of depth.

Nose: Soft caramel, warm agave, fresh pear, a spark of spice and oak.

Palate: Rounded and velvety—agave-sweetness meets mineral clarity, stone fruit, black pepper, hints of light coffee, and oak warmth.

Finish: Smooth and honeyed—slightly dry, but comfortingly complete.

Here’s where this reposado opens up: serve it with apple-wood smoked pork belly garnished with fresh pear chutney—the sweet fruit echoes the agave’s honeyed notes. Or try it alongside grilled peaches brushed with maple and thyme—pure, simple, and brilliantly complementary. A wedge of aged Manchego also adds salty, savory contrast that rounds everything beautifully.
