Preservation Distillery Old Man Winter Bourbon Whiskey

A 6–9-year marriage from unique lots aged in our Bardstown warehouse, these premium barrels were unified and proofed to a flawless 109.8 with Preservation Farm’s viscous limestone water. This union of Preservation’s pot-distilled bourbon and some of our older casks pays homage to the classic flavors of the much-sought-after “Dusty” bourbon. A distinct mid-century nuance that beautifully sets it apart in our collection.

Nose: Stone fruit bursts forth—think ripe apricot and plum—mingled with caramelized nuts. Toasted wood wafts in, bold yet balanced. It’s a heady tease.

Palate: Sweet melon drizzles over caramel, then rye spice swoops in with a peppery edge, grounded by sturdy oak. Complexity reigns supreme.

Finish: Warm kitchen spices linger—cinnamon and clove—fading into a dry, oaky hush that’s long and satisfying.
