ABOUT

Chichibu's elusive Zodiac Series strikes again with an absolute masterclass in maturation. This eighth installment celebrates the "Year of the Snake," a symbol representing profound adaptability across the zodiacal calendar. Kawanabe Kyõsai’s striking 1880s woodblock artwork commands the bottle's label, hinting at the fiercely creative liquid trapped inside. A mere 239 bottles entered the market. It's a momentous pour, capturing the raw experimental vigor of a celebrated distillery deep into its second decade of operation while thoroughly dismantling ordinary single malt conventions.

This maturation trajectory is frankly audacious. Unpeated Concerto barley underwent a grueling 100-hour fermentation inside traditional Mizunara oak washbacks before running through specialized Forsyths copper pot stills. Then the true sorcery actually commenced. The resulting distillate rested in a standard ex-bourbon barrel for four years, establishing vital structural sweetness, before being abruptly transferred into a heavy-hitting ex-imperial stout cask for an equally long secondary maturation. This dual-cask collision yields a preposterously complex malt.

Bottled at a formidable 63.6% ABV, the whisky demands serious attention. The stout cask influence doesn't overshadow the foundational bright, estery character that fans of the brand obsessively hunt down. Instead, heavy roasted malt undertones constantly wrestle with effervescent orchard fruits in a spectacularly chaotic, yet ultimately harmonious, fashion. It drinks remarkably nimble for its proof. There's zero hesitation on the palate, just a relentless wave of saturated flavor that directly challenges every preconceived expectation of what a heavily finished, cask-strength Japanese release can actually achieve in the glass.

  • Distilled from 100% unpeated malted Concerto barley
  • Aged 8 total years (Ex-Bourbon and Ex-Imperial Stout)
  • Strictly limited to an ultra-rare 239 bottles stateside

TASTING NOTES

Nose: Generous waves of vanilla wafer and warm baking spices lay down a sturdy foundation, allowing vibrant, fruit-forward aromatics to vigorously punch through the glass.

Palate: Lively explosions of freshly peeled grapefruit and crushed wildflowers crash into under-ripe green banana, while a dense, saturating vanilla bean sweetness anchors the mid-palate.

Finish: Satisfyingly full-bodied and precise, carrying a persistent roasted malt tension that slowly dissolves into a lingering, estery citrus zest.

FOOD PAIRING

Match this stout-finished powerhouse with a deeply charred, dry-aged ribeye. The aggressive crust perfectly amplifies the dark, roasted malt undertones lurking within the spirit. Alternatively, a dark chocolate espresso tart vigorously slices through that dense vanilla bean sweetness, creating an incredibly decadent flavor collision on your palate. Sharp blue cheeses provide funky contrast. This pungent pairing elevates the bright grapefruit peel notes spectacularly.
