New Southern Revival Rye Whiskey Finished In Tawny Port Casks

Charleston's High Wire Distilling Co. will release two special whiskey expressions: their flagship Jimmy Red Bourbon finished in Oloroso Sherry Casks and a Rye Whiskey finished in Tawny Port Barrels.

This one, in particular, is Whiskey Finished in Tawny Port Barrels, which is offered at 90 proof.

Starting with their 100% raw Abruzzi rye whiskey, the distillery finished this 18-month-old spirit for an additional 6 months in freshly dumped Tawny Port barrels. The result is a complex spirit heralding notes of florals, fruitcake, ripe cherry, rye spice, and antique wood with a long finish.

Nose: Floral rye, fruitcake, ripe cherry, antique wood.

Palate: Dried fruit warmth, caramel undertones, spice-kissed oak.

Finish: Long, soft—fruit-laced warmth with old-wood echoes.

Pair with dark chocolate dipped fruit to echo its dried-fruit warmth. Fruitcake or spice biscotti bring out its festive spice and oak notes. For contrast, try aged Manchego or roasted pecans, marrying savory balance with its orchard-driven finish.
