Heaven Hill Heritage Collection 19 Years Old Kentucky Straight Wheat Whiskey

The Heaven Hill Heritage Collection exemplifies the true craftsmanship, patience and consistency that are hallmarks of the almost 90 years of Heaven Hill's whiskey-making traditions. With new editions released every spring, this collection features Straight American Whiskeys from one of their six traditional mashbills. Ages vary by release but all editions feature their oldest stocks of barrels.

The Heaven Hill Heritage Collection 2025 release is a 19-year-old Kentucky Straight Wheat Whiskey that is non-chill filtered and bottled at 100 proof. The liquid consists of 277 barrels from the fifth and sixth floor of rickhouse Y. All barrels were produced in August and September 2005. The mashbill uses 51% Wheat, 37% Corn, and 12% Malted Barley.

Aroma: Seasoned oak with honey sweetness. Hints of clove and nutmeg.

Taste: Cinnamon Graham crackers. Rich and sweet with some aged oak and lots of baking spices, particularly cloves.

Finish: Warm, medium length with maple syrup and caramel sweetness. Some tannins at the end and a peppery tingle.

Nose: Seasoned oak and caramelized sugar lead, with honeyed grains, dried fig, and hints of clove and nutmeg. A touch of toasted oak adds warmth. It’s a subtle, inviting tease.

Palate: Silky and rich, with cinnamon graham crackers, vanilla bean, and cherry. Aged oak and baking spices, especially clove, blend with brown butter and toasted hazelnuts for a bold yet soft depth.

Finish: Warm and medium-long, with maple syrup, caramel sweetness, and a peppery tingle. Soft spice, dry oak, and lingering tannins create a refined glow.

Pair this whiskey with smoked brisket—the honey notes love the char. Want a bite? Try aged gouda; it lifts the hazelnut. For dessert, a pecan pie echoes the palate’s richness. Feeling bold? Grilled duck with a fig glaze ties the finish into a Kentucky feast.
