Twelve years is a long time to wait for a drink, isn’t it? But when Enrique Fonseca is the one watching the clock, you know the patience pays off. This isn't your standard caramel-bomb Extra Añejo that drowns out the agave; it’s a masterclass in balance from the legendary NOM 1146. Fonseca does things differently here. He blends spirit from copper alembic pot stills with a portion from copper double-column stills, creating a canvas that is both rich and surprisingly crisp.

Then comes the wood. Instead of just dumping it into bourbon barrels, this liquid rests in American white oak previously used for California red wines and a touch of dark French oak.Aged at 3,800 feet in a cool, subterranean cellar, the interaction between spirit and wood is slow, deliberate, and gentle. The result? A tequila that feels more like a fine cognac or an aged distinct whisky, yet never loses its Mexican soul. It’s dry, complex, and refuses to rely on sugar additives to make its point. You drink this when you want to understand what the passage of time actually tastes like.

TASTING NOTES

Nose: It opens with a surprising gentleness, offering aromas of roasted agave piñas and fresh-cut grass that evolve into dried fig and sesame oil. Dig deeper, and you’ll find apple skins, subtle cacao, and a distinct lack of the aggressive vanilla warmth found in lesser bottles.

Palate: The texture is velvety but lively. You get an immediate hit of caramelized agave and toasted nuts, quickly followed by a wave of baking spices and butterscotch. It’s not cloying; there’s a sophisticated dryness here, marked by notes of tobacco and black pepper that keep the sweetness in check.

Finish: Long and warming, but clean. The fade brings back the apple-cinnamon character and a spicy oak maturity that lingers on the tongue for ages.
