New Holland’s brewing heritage isn't just backstory—it’s built into the whiskey-making process. Dragon’s Milk Origin begins with a high-malt mash bill of 55% corn, 6% rye, and 39% malted barley, creating a distinctive flavor foundation. The brewery brings that expertise into bourbon production, handling both the cooking of the grain mash and fermentation before transferring the fermented mash to the distillery.

The distilling process is equally compelling. New Holland uses a Prohibition-era pot still originally built in New Jersey to distill apple brandy. After 5 years and 2 months of maturation in its original Kelvin cask, the bourbon received an additional 7–10 days of finishing in a first-use Kelvin Cooperage barrel featuring a Medium Toast and Char #3 profile. This combination of traditional distillation and a carefully specified toasted-and-charred oak barrel adds another dimension to the bourbon’s flavor development.
