The Prime Barrel travelled to the heart of California’s San Joaquin Valley to select a barrel of Corbin Cash Merced Rye.  And just when we thought we had the answer, Corbin Cash distiller and proprietor David Souza changed the question by including a bourbon among the six barrels that we tasted.  The flavor profile of the bourbon was so impressive that we had to walk away with two barrels: this standout bourbon and the rye that we came for.  

Corbin Cash Boubon is pot distilled from a mashbill of 75% yellow corn grown within a mile of the distillery, 15% Merced Rye grown on the Souza family farm, and 15% malted barley.  It rested in a char level 4 wine-like barrel while aging for 8 years in the dry California heat.  The hot and dry conditions in the rickhouse caused water evaporation, raising the proof and forcing the bourbon deeper into the barrel for extended periods of time, enhancing flavor extraction.
