ABOUT

Terroir is rarely a word tossed around in the whiskey world, but it absolutely anchors what happens in New Ulm. Minnesota's fierce climate shapes every drop of this intriguing blend. Two childhood friends—a sixth-generation farmer and a sixth-generation brewmaster—decided macro-bourbon needed a challenger. They didn't just source local corn; they cultivated an entirely northern taste profile from the soil up. Every single ingredient thrives within a few miles of the distillery. The result defies every conventional expectation. By blending brewing science with agricultural grit, Black Frost captures the Upper Midwest's essence without overused industry tropes.

Fermentation here doesn't resemble standard production; it feels like a rogue science experiment. Instead of towering stainless steel, the mash aggressively bubbles away in wide, open-top wooden vats. They propagate a finicky yeast strain in-house, letting it run wild alongside ambient microflora for an entire week. That translates to an ester-heavy, deeply complex wash rarely seen outside of funky rum production. The grains are actually fermented, distilled, and aged separately. Mashing these estate-grown grains individually allows the wheat's creamy sweetness and the rye's fiercely sharp bite to fully develop before their final, meticulous marriage. It requires immense, calculated patience.

Wood selection often makes or breaks a young spirit, and they aren't taking any shortcuts. Black Frost leans heavily on harvested Minnesota oak, coopered into robust barrels with a number three char. The distillate enters the wood at a shockingly low 110 proof. Slow-proofing the spirit directly inside the barrel meticulously extracts a much softer, highly nuanced tannin structure over the course of its initial two-year slumber. This deliberate approach transforms a heavy-corn recipe into something vibrant, profoundly spiced, and unexpectedly layered for its age. They're playing a brilliant game.

  • Mashbill: 63% Corn, 25% Malted Wheat, 7% Malted Barley, 5% Malted Rye
  • Fermentation: 7-day open-top wood vats
  • Barrels: Minnesota-grown oak, #3 char

TASTING NOTES

Nose: Wintermint and sweet corn leap out of the glass first, followed by a slightly perfumed wave of fresh timber. Give it a minute, and faint traces of leather anchor the brighter, youthful grain notes.

Palate: Spiced chocolate ganache hits the tongue immediately, providing a surprisingly dense texture for a young whiskey. That initial sweetness splinters into robust cinnamon, black pepper, and just a fleeting shadow of dried figs.

Finish: Charred oak anchors the finish, pulling the lingering vanilla into a dry, pleasantly spiced conclusion. It leaves behind a delicate, minty warmth.

FOOD PAIRING

Rich, chocolate-forward whiskeys absolutely thrive alongside roasted or braised meats. Toss a heavily marbled ribeye on the grill tonight. Let the charred crust echo the oak tannins while the rich fat cuts right through the spirit's peppery bite. If you're skipping the butcher, grab sharp aged cheddar and dark chocolate almonds to amplify those subtle fig notes.
