Each year, Four Pillars take some Yarra Valley Shiraz grapes and steep them in the Rare Dry Gin for eight weeks. The fruit is de-stemmed, the berries are kept whole and the tanks are stirred daily. The fruit is pressed before blending with more Rare Dry Gin. Ruby in color, the Shiraz adds another dimension of sweetness that plays well in cocktails. The gin is unfiltered and best drunk within two years of the vintage.
