Bunches are 100% de-stemmed and transferred to stainless steel tanks. Total maceration time is 13 days, extraction by pump-over only. Natural yeast fermentation. Lasts 6 months in stainless steel tank. The wine is bottled during the spring following harvest. Often earth- filtered depending on vintage, sometimes fined with gelatin.
