ABOUT

In 2007 Benjamin Taillandier settled in his family's hometown of Caunes-Minnervois, which sits between the ancient city of Carcassone and the Montagne Noir. He purchased 5.7ha of Grenache Noir, Syrah, Cinsault, and Terret Gris and began working it organically, eventually converting all of it over to Biodynamics. Each year he added a plot here and there and his estate has grown to 9.5 ha all of which is harvested by hand and now fully Ecocert certified. He also runs a terrific wine bar downtown called Cantine du Curé which is open during the summer tourist season.

Cinsault/Syrah/Carignan. 30 year old vines for this cuvée, harvested by hand, cold maceration, natural yeast fermentation. 6 months of aging in stainless steel, unfined, unfiltered. 10mg/l of sulfur added at the bottling.

TASTING NOTES

Fresh fruit for this wine witch can be drunk for pleasure as aperitif wine, but also with strong food and cheeses, as the highest, few tannins smooth and delicate, drinking 1° less than usual wines 15/16°C is accepted according to circumstances: for aperitif, although for drinking with gourmet food, we recommend 17° service.
