ABOUT

Buffalo Trace rarely tinkers with their wheated mashbill, making this 2016 standalone release an absolute anomaly. They didn't just dump spirit into standard wood. Barrels underwent an obsessively long seasoning process before maturation began. To extract radically different flavor compounds, Independent Stave Company submerged select oak staves in an enzyme-dense, 100-degree bath before meticulously kiln-drying them to precise humidity thresholds. Other staves weathered the harsh elements for six to twelve months in the open air. This extreme preparation forces the wood to yield atypical complexities. The final whiskey stands entirely apart.

Bottled strictly in bond at 100 proof, the liquid inside carries zero rye content to balance its inherent sweetness. Instead, that meticulously prepared oak shoulders the burden of structure. Decades of conventional bourbon wisdom suggest the oak merely houses the resting spirit, but here that fiercely seasoned wood actively steers the entire flavor-development trajectory. Earthy nuance overrides the typical cherry-vanilla profile you'd normally anticipate from the distillery. It drinks heavy and deep. Maturation reportedly stretched well beyond a decade, cementing a dense, leathery backbone that holds firm against the sweeter grains.

  • Meticulously treated oak staves
  • Buffalo Trace wheated mashbill
  • Bottled strictly in bond

TASTING NOTES

Nose: Caramelized sugar and dried cherries hit immediately, overshadowed by a surprisingly potent waft of butterscotch and aged humidor cedar.

Palate: Bright citrus oils merge with viscous caramel corn across the mid-palate, while that aggressively seasoned oak manifests as dry polished leather instead of bitter tannin.

Finish: Clove and warming cinnamon bark linger relentlessly, leaving a dusting of tobacco leaf that slowly dissolves into residual vanilla.

FOOD PAIRING

Smoky, campfire-seared ribeye effortlessly anchors the potent oak structure found within this pour. Fatty marbling tames the residual wood spice. Those caramelized surface proteins beautifully amplify the underlying wheat sweetness. Alternatively, wedge a hunk of aged Gouda alongside it. It's remarkable how the cheese’s tyrosine crystals slice right through the dense vanilla.
