From 200+ year old vines that are believed to have descended from those brought to Mexico by Hernan Cortes in 1520, Roberto Henriquez makes some of the best Pais wines in the world. Following organic and biodynamic practices, the dry-farmed grapes are hand harvested and fermented with ambient yeast with no punch downs or pump overs to minimize extraction. The result is a wine that’s both rustic and elegant.

TASTING NOTES

It’s light-bodied with fresh cherry and raspberry flavors, balanced acidity, pronounced earthy notes and dry, dusty tannins on the finish.

FOOD PAIRING

Pairs well with soft, moldy cheeses or a mushroom parmesan Risotto.
