ABOUT

Here’s a Champagne that doesn’t follow the usual script—it creates its own. Crafted by Dominique Moreau at Marie Courtin in the Côte des Bars, “Efflorescence” Extra Brut is made from 100 % Pinot Noir, grown organically and biodynamically on Kimmeridgian-limestone soils. Fermented in used barriques and aged on the lees for around three years before disgorgement with zero dosage. The result: intense minerality, red-berry structure, crisp acid drive and a long finish that lingers with saline clarity. Drink now for vibrancy, or cellar for elegance.

TASTING NOTES

Nose: Layered aromas of wild cherry, raspberry skin, brioche crumbs and crushed chalk. A faint wood-smoke and wild herb shimmer beneath the fruit.

Palate: The palate pulses with bright red apple, ripe strawberry and soft orchard fruit folding into chalky minerality and firm structure. The acidity is energetic, the texture vibrant.

Finish: Dry, persistent and elegant—white-flower whispers, a hint of savory sea-spray, and that limestone core holding everything together. A Champagne that invites another sip and another

FOOD PAIRING

Pair with elevated fare: seared scallops with beurre blanc, roasted guinea-fowl with wild herbs, savory gougères, or even ultra-fresh oysters on the half shell. The wine’s minerality and tension make it a superb match for nuanced and rich dishes alike.
