From the chalk-and-clay soils of Penedès comes something quietly profound. The 2023 “Rupestris” from Celler Pardas is a perfectly balanced white — grown organically, minimally intervened, and deeply expressive of place. With vines averaging 25-50 years, the blend of Xarel·lo (≈80%) and Malvasía de Sitges (≈20%) yields a wine that shimmers with mineral clarity, citrus brightness and subtle Mediterranean herb undertones. This is a wine for those who value authenticity, fresh acidity, and a thoughtful expression of terroir.

TASTING NOTES

Nose: Bright grapefruit zest and yellow apple meet white-flower blossom and a salt-kissed sea-shore breeze. A subtle hint of rosemary and wild fennel lingers in the background.

Palate: Crisp and lean, the palate opens with green-apple and lemon pith, moving into stone-fruit flesh (peach, apricot), firm minerality and a thread of herb-driven savour. The texture is layered yet transparent.

Finish: Clean, persistent and slightly saline — a whisper of crushed chalk, a touch of almond-skin bitterness, and a freshness that entices another sip.

FOOD PAIRING

Ideal with Mediterranean seafood — grilled sardines with lemon and herbs, or sea bass ceviche with citrus and coriander.
