Distilled in 1989 at the Cooley Distillery from a blend of malted and unmalted barley, the whiskey is initially aged in ex-rum casks for 27 long years to create its sweet and spicy character. After this initial beauty rest, it is then transferred to casks which previously held Pedro Ximénez sherry and was used in a solera to finish for two years picking up a succulent fruity taste along the way before being finally brought to proof using pure water and bottled.
