Laws Whiskey House "Breaking The Law: Prime Suspect" Collaboration Experiential Single Barrel Sauternes Finish Rye Whiskey

Laws Whiskey House, otherwise known as A.D. Laws, is located in Denver, Colorado. The distillery makes bourbon, rye, and a variety of limited releases. Limited releases include their Experiential series, which is the category this Sauternes Finished Rye falls into.

We tasted through some standard Laws whiskey, but as luck would have it they followed up with an option for their sauternes finished rye, and we knew immediately that it was something we wanted to try. So we sampled virtually with our friends at Breaking Bourbon and picked a winner.

Laws provides a wealth of information on the label alone. This whiskey is made from an unusual 100% rye, of which 50% was raw and 50% was malted. A sour mash was used, and it was triple distilled. For the first round of aging, it went into a 53-gallon ISC brand barrel with a char #3 at 125 barrel entry proof. For the sauternes finishing, it was aged in a 225L French oak sauternes cask. The end result is a 123.1 proof sauternes finished rye whiskey with loads of depth.

Since this was a joint pick with the Breaking Bourbon crew, we wanted to come up with a sticker that incorporated both names. Incorporating “Law” into the concept in some way made perfect sense, and we immediately landed on something that revolved around “Breaking the Law" and "The Prime Barrel" concepts. This also played into the unique aspect of a 100% rye whiskey finished in a Sauternes cask. 

Nose: Malt, dark fruit, rye spice, dates, figs, interesting, unique, and funky
