ABOUT

Tequila Cabal Reposado catches the eye with that sculpted horse-head bottle, but the real charm sits quietly in the glass, waiting patiently for attention. The look feels deliberately modern. Made in Amatitán from estate-grown, USDA-certified organic Blue Weber agave, it leans on slow brick-oven cooking, open-air stainless fermentation, and double pot distillation for its backbone.

The reposado rests between six and ten months in a mix of ex-bourbon and ex-rye barrels, with a duration of roughly eight months, which builds gentle color and structure. Nothing feels rushed or forced here. USDA Organic and additive-free, it keeps sweet cooked agave at the center while letting vanilla, oak, and soft spice frame the edges.

You can pour it neat after dinner, slide it over a cube, or fold it into a reposado margarita that tastes like agave, not syrup. It exudes quiet confidence, not flashy. Cabal Reposado sits in that space where a serious drinker can linger over minor details, yet friends new to agave won’t feel intimidated.

TASTING NOTES

Nose: On the nose, sweet cooked agave leads, wrapped in caramel, vanilla, and gentle white oak that leans more dessert-like than lumberyard. There’s a faint echo of baking spice. Hints of butterscotch, citrus peel, and a soft mineral note keep the aroma from drifting into cloying sweetness.

Palate: The first sip lands plush and rounded, with cooked agave, caramel, and vanilla layered over white oak, rye spice, and a touch of butter. Pepper shows up, but stays polite. A little cinnamon, dried orange, and grassy sweetness sit underneath, tying the barrel notes back to the field they came from.

Finish: The finish is medium-long, trading caramel and vanilla for drier oak, black pepper, and a mild nuttiness that feels almost like toasted almonds. A warm glow lingers in the throat. Mineral and herbal traces return at the very end, reminding you that this started as living plants in volcanic valley soil.

FOOD PAIRING

Cabal Reposado pairs beautifully with grilled food, especially citrus-marinated chicken, pork al pastor, or shrimp skewers that have a hint of char and fat. The oak and vanilla love smokiness. Street-style tacos with caramelized onions or roasted poblano rajas echo the tequila’s sweet agave and baking-spice streak without turning the pairing heavy.

For a quieter moment, try aged cheeses, dark chocolate with a hint of sea salt, or flan where burnt sugar complements the barrel notes. It never bulldozes the plate. Instead, it threads through the meal, adding warmth, texture, and a calm sweetness that makes the whole spread feel a little more considered.
